...here we have a kind - "döner-kebab" - only in a smaller form, processed lying flat. as is well known, we are working on preparing our food distribution machines for future diverse tasks. unfortunately it is the case - that today's common recipes and process technologies for the production of meals are neither suitable for machines nor correspond to what we imagine. we want to have freshly prepared - natural, normal - without artificial admixtures or additions. for the doner kebab: i call it that here, it will be renamed later in a context that suits us - we have very thin slices of any meat. So from sheep, goat, duck, chicken, turkey, rabbit, calf, beef..... we first provided 1.5 mm thick meat slices, which are then cut into 46 x 46 mm slices. the slices of meat are seasoned with cream and spices - we use the 5-spice concept that applies to peking duck here - and season moderately by adding cream. so we marinate for at least 12 hours - that would be normal processing - we can't wait that long in the food distribution machine. the marinating takes place under steam pressure - so quite quickly and quickly. (recipe: star anise, cinnamon, fennel, cloves, cardamom in a defined composition - put together by yourself) then the slices of meat - together with a thick slice of a firm onion - are brought together as a static supporting and limiting element - and automatically receive two wooden skewers made of beech wood and are then cut to a diameter of just 46 mm. the whole thing is then - on one of our proven mini-conveyor belts, as an adapted oven chain - constantly rotating and cooked - whereby we use cast-iron radiating plates from above. the reason: cast iron is able to store extreme heat - because we heat with gas - first of all we don't want direct contact with the food to be grilled - and on the other hand we want to use the fuel gas in a targeted and efficient, i.e. economical way as an accompaniment we have provided dumplings with quark, cream yoghurt. step, igs, stl
